High-end oil and vinegar on tap at Seasons

Seasons Olive Oil & Vinegar Taproom, which features a collection of ultra-premium balsamic vinaigrettes and extra-virgin olive oils, has opened at 36 W. King St.

The shop is the third store for Tim and Soraya Balshi who also have locations in Annapolis, Md., and Bethlehem. They have been in the olive oil business for 15 years and also maintain a 2,000-acre olive grove in Spain.

The Lancaster shop offers 52 varieties, split about equally between olive oils and balsamic vinaigrettes, including an olive oil infused with blood oranges as well as cranberry, pear and peach balsamic vinagrettes.

In the shop, customers can taste and smell-test each of the varieties as well as read short descriptions and get ideas for food pairings.

Tim Balshi, who demonstrates an encyclopedic knowledge of olive oil and balsamic vinaigrettes, says the items are sold like fresh produce, bottled on the premises and are of such a high quality that they are pleasingly drinkable.

Before opening the new shop, Balshi oversaw a roughly $65,000 renovation that included putting in new flooring and walls and installing new lighting. The shop has five employees and also offers a few specialty food items such as pastas and dips.
